Happy Labor Day! Surprise! I cooked Dinner tonight!

Mini - organic - Eggplant Parmigiana!

1/2 Inch sliced - steamed - beforehand eggplant - three layers with homemade Italian Sauce with Italian Spices, Fresh Tomato, Garlic - "chopped - diced" Peppers,

My faborite, Basil - Pesto sauce from Italy,

and fresh - Basil "chopped" as well. 2% Lo - Fat - Mozzarella cheese with a hint or more

of freshly grated - crumbled - parmesan cheese, and Basil leaves on the side as well.
